All cacao is not created equal. Cacao is also different than the “cocoa” term many are familiar with. Cacao refers to the the Theobroma Cacao tree, where Cacao comes from, and is the word best suited when referring to the unprocessed versions of the cacao bean itself. When you hear the term “cocoa,” many times it is referring to the cocoa powder and chocolate that has been through quite a bit of chemical processing and / or roasting processes. These various processes reduce the overall density of antioxidants and flavanols. This reduced density means less nutrients that can help support beauty and brains*, among other things.
The traditional “Dutch processing” method greatly reduces antioxidants per the findings of a recent study. Between 60% and 90% of the original antioxidants in cacao are lost through the process. This Dutch process was originally developed to reduce bitterness of the cacao bean and create more attractive colors. Other brands don’t use fair trade practices and, in some instances, use child slaves who are forced to engage in dangerous work such as using machetes and applying toxic pesticides.
